Fool-Proof Recipes:

Quick Berbere Lentils (Misir Wat)

Prepare this for the trail by dehydrating the tomato paste and cooked onions.

2tbsp tomato paste
1/4c yellow onion, diced
1c split red lentils
1 packet Berbere Trail Spice

Cook the onions until translucent. Add lentils, Berbere Trail Spice, tomato paste, and water (based on lentil cooking directions) and simmer until done. Lentils should be soft and stew-like. Add salt to taste and serve!

Tex-Mex Salad Dressing

This one's a good add-in on the trail, and to your favorite greens at home - we like it with red onion, tomatoes, red pepper, and avocado.

1/2c olive oil
2tbsp lime juice
1 packet Tex-Mex Trail Spice
